8 cups water

5 sticks cinnamon

11 star anise pods

1 T whole cloves

22 whole cardamom pods

1 T black pepper pods

1/2 C black tea leaves, any variety

2 vanilla pods

1 ½ C honey, sugar or agave (to taste)

3-4 C milk

Add all spices and tea to water and bring to boil. Turn to medium low and let gently simmer for 1 hour.

Strain with fine mesh sieve or large tea strainer. Add milk of choice and sweetener and serve!

Serves 4-8, depending on how voracious the chai drinkers are in the house!

For Crust:

3/4 pound unsalted butter, room temperature
1 cup sugar 
1 teaspoon pure vanilla extract 
1 teaspoon pure almond extract 
3 1/2 cups all-purpose flour 
1/4 teaspoon salt 
1 1/2 cups small diced pecans
Preheat the oven to 350 degrees F.
In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla and almond extracts. In a medium bowl, sift together the flour and salt, then add them to the butter/sugar mixture. Add the pecans and mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
Pat into greased 9 inch springform pan.
Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature and serve.

For filling:

1 small-medium kabocha squash or pumpkin
2 C soaked cashews
1 1/4 C raw nut milk or 3/4 can coconut milk
1 C Agave
1 ts ground vanilla pod
1 ts glycerine based vanilla extract
1/8 ts salt
1 ½ TB Pumpkin Pie Spice
Optional: 1-4 drops flower essences of your choosing: gold, solstice sun, pumpkin blossom, etc.

Blend until fully smooth and warm to the touch. Add:

1 C raw coconut oil, melted in double boiler
3 TB lecithin

Blend until fully smooth and incorporated and warm to the touch. Should have the consistency of a rich smoothie or cake batter. Pour over cooled shortbread and let set in freezer, 1-2 hours. Meanwhile, make topping.

For cream topping:

3 C soaked cashews
2 C raw nut milk or 1 can coconut milk
1 ½ C Agave
1 ts ground vanilla pod
1 ts glycerine based vanilla extract
1/8 ts salt
1/8 ts cardamom
1/8 ts nutmeg
¼ ts cinnamon
dash clove
1 TB dark rum

Blend until fully smooth and incorporated and warm to the touch. Add:

1 C raw coconut oil, melted in double boiler
3 TB lecithin

Blend until fully smooth and incorporated and warm to the touch. Should have the consistency of a rich smoothie or cake batter. Pour over set pumpkin filling and freeze until set. Place in refrigerater until ready to serve, up to 1 day.

2 Tablespoons Black sesame tahini

Nothing can compare to her lusciousness- she is the sumnation of all things soft, gentle, womanly, divine.

As I made this essence, I could not help but lay down in the cool damp grasses by her side and swoon as starlight and moonbeam and soft raincloud kissed the bowl and her blossoms there. So fine!

Lehua Rainbow

Kilauea Crater, Big Island Hawaii 2008

Made under a double rainbow overlooking Kilauea Crater, home of Pele herself. Amidst miles upon miles of pure lava rock stretching out for what seems like eternity, the small and vibrant Ohia Lehua tree lives, her firey red blossoms and green leaves the only color or verdant life around. Like a firework display or the great awakening of passion, the lehua is unabashed and bold, like the molten world from which she rises, like her goddess mother, Pele.

Legend has it there was a handsome young warrior named Ohia whom Pele, goddess of fire, wanted to marry upon first sight of him. But Ohia already had a love named Lehua and so refused her. Pele’s jealous fury took over and she turned him into an unassuming little tree called Ohia. When Lehua learned of this, she begged Pele to turn him back into human form but Pele would not, so she turned to the other gods and begged the same of them but they could not, but instead turned Lehua into a beautiful red fire flower who grew upon and lived side by side with the Ohia tree from then on.

Thus, the Lehua essence is an essence of eternal and requited love, of healing the loneliness of the heart (Pele’s in this case!!!) and a souls return to true love.
